The student center isn’t the only thing that is under construction at Spring Arbor University (SAU); the dining commons (DC) menu is also being renovated.
The DC staff installed a “You First” comment board Monday Jan. 30, and it was soon filled with students’ concerns. The staff took all those notes into consideration. New for the week of Feb. 6 is peanut butter and jelly pizza, honey for tea and a separate garbage bin for paper waste.
Waste management is a priority both in trash consumption and portion control. Signs around the DC advertise the size of pasta portions and urge customers to eat everything on their plate.
“Stealth health” is being incorporated as well, including the reduction of fat and sodium across the DC. Fresh fruit is becoming more available along with other healthy alternatives.
There is also an effort to make more of the foods gluten free. For example, the traditional flour used for pot pie is now being substituted for cornstarch.
SAU is on its way to becoming a increasingly environmentally and health conscious school.
